Chocolate Chip Pumpkin Bread

Mmm, I can't wait until canned pumpkin hits the shelf in September. It's one of those products that I dream about randomly in the spring and summer, but can't buy. I probably should stock up!


Tonight, I made two loaves of one of my favorite fall foods: chocolate chip pumpkin bread. So good, we even had some on the dessert bar at our wedding.

Chocolate Chip Pumpkin Bread

1 c. margarine
2 c. sugar
3 eggs
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. cloves
1/2 tsp. salt
3 1/2 c. flour
2. c. pumpkin
2 c. chocolate chips
2 c. nuts (opt.)

Cream margarine and sugar. Add eggs, beat well. Stir or beat in baking soda and spices. Stir in pumpkin, flour, chocolate chips and nuts. Grease two 9x5x3 loaf pans. Turn batter into pans. Bake at 350 for 55 minutes.

The flavor of Fall

My mother-in-law, Cathy, keeps up my subscription to Southern Living as a birthday gift each fall. I have always loved fall. How can you not agree that it is by far the best season? Boots, sweaters, cooler weather, leaves, beautiful colors. My birthday. (Matt adds football, too). This month's Southern Living has a featured section of yummy apple recipes. Perhaps, Eva (and I) are just craving something half healthy/half sweet, but these recipes look delicious and make me excited for fall to hurry up and get here.

Has anyone heard of Vestique?
